Key Responsibilities
• Build and monitor the consumption standards for raw materials for each dish on the menu;
• Check and update the preparation recipes, ensuring accuracy at every stage from preparation to final product;
• Monitor and adjust the ingredient standards to optimize costs while maintaining product quality;
• Work with the warehouse and purchasing department to ensure that ingredients are used according to the specified quantities.
• Develop and update SOPs for the processing stages; conduct direct checks in the kitchen/preparation area to ensure staff follow the procedures correctly;
• Control compliance with food safety hygiene standards as required;
• Evaluate the quality of the finished product before serving customers, ensuring the product meets standards for taste, appearance, and temperature.
• Guide and train kitchen staff on standard processing procedures and how to control quantities;
• Collaborate with the kitchen manager to propose improvements to the process, optimize preparation time, and minimize raw material waste;
• Monitor the condition of kitchen machinery and equipment and propose maintenance when necessary;
• Coordinate with the operations department to control service speed, ensuring that the processing procedures do not affect the customer experience.
• Monitor the rate of raw material loss, proposing measures to reduce waste and loss.
• Check and compare actual data with consumption standards to detect discrepancies and make timely adjustments;
• Propose substitutions or adjustments to raw materials to optimize costs while ensuring quality.
• Other tasks as required by superiors.
Job Requirements
- Age: 25 – 40 years old.
- Education: College degree or higher.
- Major: Food technology, Food processing, Restaurant management, or related fields.
- Experience: At least 3 years of experience in a similar position in the F&B sector, restaurant chains, or hotels. Knowledgeable about food/beverage processing procedures in the F&B industry.
- Computer skills: Proficient in using computers, office software, and specialized software, etc.
